Two documents on the "Bière système Pasteur", whose process was used by a German brewery, whose monopoly he contests. On a rather Germanophobic text by Henry Sagnier entitled "La bière système Pasteur et les Allemands", with corrections (in the margin and in the text), Louis Pasteur signs a "Bon à tirer après corrections. L.P.". "We have been accustomed for some time to the procedures by which the Germans shamelessly appropriate the most authentic brands of French products in order to monopolize the trade []. The fact has just become reality. Some Paris newspapers published the following announcement: "Beer unknown until now in France. Application of the Pasteur system (of the Institute). Monopoly of the Royal Brewery of Munich []. That the so-called Royal Brewery of Munich applies the Pasteur system to the production of beer is its right, as it is the right of all brewers, since Mr. Pasteur never wanted to take out a patent. But that the Royal Brewery of Munich has a monopoly is absolutely false and inaccurate. The word monopoly implies an agreement or a contract which Mr. Pasteur repudiates with energy. He is indignant about the odious abuse of his name []". And he sends this letter: "Many thanks, sir, for your communication. But what to do. I know others of the same kind. What is strange is the word monopoly, because it implies an agreement and a contract with Mr. Pasteur, which is entirely made up []".
